Ramsey's Fish & Chips

- 120g plain flour
- 100g rice flour
- 1 tsp baking powder
- 130ml soda water
- 170ml lager
- Salt
- 1 tsp sugar
- vegetable oil for deep fryer
Directions
- Mix both flours, baking powder and sugar
- Add Soda water, lager and salt
- Mix together until the batter binds and is smooth, no over-mix
- Cover fish with dusting of plain flour, drop into batter and coat
- Heat oil to 180C
- cook for 8-10 minutes, until golden
- Remove from oil and drain.
